According to the shiitake processing method,shiitake mushrooms can be classified into 1)fresh shiitake;2)dried shiitake.

Wood logs cultivated shiitake mushrooms can be classified into hana donko,donko,shiitake,koshin and off-grade shiitake according to the Japanese Shiitake Standard.

Shiitake names and their descriptions: hana donko are best choice thick shiitake,with cap variegated, cap edges curled,in very good shape,with a special flavor;donko are best choice thick shiitake with cap edges curled,specially thick, caps like cups and fresh & yellowish cap gills in very good shape;shiitake are thick shiitake with cap edges curled,thick and and fresh & yellowish cap gills in good shape;koshin are thin shiitake with cap edges flat, fresh,yellowish cap gills in good shape;off-grade shiitake are shiitake with cap not complete, not good in shape and color.
